COWSNEST RYE BREAD (my version)
This is really tasty bread! I learnt the recipe while I was WWOOFing in Candelo, at a community farm called Cowsnest. The initial recipe is 50% wheat (plain/white) flour, 25% wholemeal flour, and 25% rye flour. But I wanted a healthier bread. Besides, I reckon it also tastes better!
Method
Mix: 3 cups wholemeal flour, 3 dessertspoons dried yeast, 3 dessertspoons molasses, 2 1/2 cups warm water.
Let stand for 30-60 minutes, or until frothy.
Add: 3 cups rye flour, 1 dessertspoon salt.
Knead. Cover and let rise till doubled in size (about 1 hour).
Knock back. Knead for about 1 minute.
Bake on tray at 180 deg. C for 30-40 minutes.
