Typical dinners comprise lots of veggies, a sauce or flavour, and maybe some protein and/or carbohydrate sources (depending on whether or not I’ve had my tin of baked beans for the day and how much bread I ate!). The veggies vary, depending on what I can buy, but the ones listed would be my preference.
Massaman Curry (Maesri curry paste and Ayam coconut cream): Onion, potato, carrot, mushrooms, broccoli, tinned pineapple, tinned brown lentils (optional).
Veggies in Hoisin/Oyster/Satay Sauce: Onion, Chinese greens, green capsicum, broccoli, cauliflower, mushrooms, squash. Usually have with instant noodles. Sometimes with tofu too.
Tomato Bean Casserole: Onion, green capsicul, zucchini, carrot, mushrooms, eggplant, broccoli, tinned diced tomatoes, tinned butter beans.
Vegetable Noodle Soup: (Have to use Indomie – Mie Goreng noodles). Same veggies as for Veggies in Hoisin/Oyster/Satay Sauce, but eaten in noodle broth.
Veggie Burgers: Just the same as my salad sandwiches only with a veggie pattie. Yum!
Emergency rations (for when I can’t buy any food!):
Packet vegetable soup with red lentils added – best with bread.
Deb (instant mashed potato), surprise (dried) peas, red lentils.
These are far from appetising, but at least they provide me with energy and some sustenance.
